Macadamia and berry Christmas cookies


Why we love macadamia and berry Christmas cookies

1. Best eaten fresh from the oven.

2. Delicious for elevenses or 3pm tea.

Ingredients

125g unsalted butter, softened

2/3 cup firmly packed brown suga

1 egg

1 tsp vanilla extract

300g plain flour

1 tsp baking powder

200g white chocolate, roughly chopped

1 cup macadamias, roasted

1/2 cup dried craisins

8 strawberries, finely chopped

1 cup blueberries



Directions

1. Preheat the oven to 175 degrees C and use an electric beater to beat the butter and sugar until thick and creamy. Add the egg and vanilla and continue to beat until combined.

2. Fold the flour through, followed by the baking powder, then add white chocolate, macadamias, craisins and berries to form a chunky mixture.

3. Grease and line two baking trays, then spoon dollops of the mixture onto the trays and gently press down to flatten.

4. Bake in the oven for 20 to 25 minutes or until golden brown. Remove from the oven and cool completely before enjoying.
