Ginger Pancake Recipe For Christmas Eve Breakfast

Ingredients

 Flour - 2 cups
Sugar - 1 cup
Baking powder - 2 tbsp
Baking soda - ½ tsp
Cinnamon - 1 tsp
Ginger - 2 tsp
Nutmeg - ¼ tsp
Cloves - 3
Salt to taste
Milk - 1 cup
Molasses - 2 tbsp
Eggs - 2 (beaten)
Buter - 2 tbsp
Oil - 1 tbsp

Procedure

You need to first whisk the ingredients in a bowl (flour, sugar, baking powder, baking soda, cinnamon, ginger, nutmeg, cloves, salt). Make sure to mix the ingredients well with each other.

Take a separate bowl, place all the wet ingredients in it ( milk, molasses, eggs) and whisk it together with the help of an egg beater.

Now add both the mixtures together and combine it well.

Let the batter stand in for about 15 minutes allowing it to thicken.

Now take a pan, grease it with a little oil and gently place the 2 tablespoon of batter on the pat when hot. Allow the batter to cook well over the medium flame for about 2 to 3 minutes

When the batter/ginger pancakes start to turn a golden brown, flip it onto the other side allowing it to cook. Wait for another 3 minutes and then remove from the flame.

Follow the same procedure with the entire batter.

You can top the ginger pancakes with maple syrup or with honey. To make it all the more colourful you can also add chopped fruits on top.
