Toffee apple cookies



Why we love Halloween cookies
1. Totally delicious and moreish.
2. The perfect cookie: crunchy outside and chewy inside.
3. Great for a party or filling the biscuit tin.
4. Very easy to make.
5. Ideal for kids.

Ingredients
175g butter, unsalted, at room temperature
3/4 cups caster sugar
2 egg yolks
50g ground almonds
85g chewy toffees, chopped
85g dried apple, chopped
1 2/3 cups self-raising flour
2 tbsp milk

Directions
1. Preheat your oven to 170 degrees C and beat the butter and sugar together with an electric whisk until creamy.
2. Stir in the egg yolks, almonds, apple and toffees, then fold in the flour. Mix well to form a dough.
3. Grease and line two baking sheets. Roll the cookie dough into small balls, place on the baking sheets and flatten slightly by hand. Brush with a little milk and bake in the oven for about 8 to 12 minutes.
4. Remove from the oven and cool for five minutes, before transferring to a wire rack to cool completely.
