Healthy protein cookies

1 cup almond butter
1/2 cup light brown sugar, plus 2 tbsp
1/4 cup honey
3 eggs
1 tsp vanilla
1 cup rolled oats
1/2 cup coconut flour
1/2 cup almond meal
1/2 cup flax meal
1 tsp baking soda
1/2 tsp baking soda
1/2 tsp salt
1 cup dark chocolate chips
2/3 cup chopped pecans (or any other nut)

1. Preheat the oven to 180 degrees C and place one cup oats in a food processor, processing until fairly fine.
2. Blend the almond butter, sugar and honey until well combined, then add the eggs and vanilla and mix well.
3. Add the four kinds of flour/meal (oat, coconut, almond and flax), baking soda and salt and blend well. Fold in the remaining chocolate chips and nuts.
4. Line baking sheets with baking paper, then spoon tablespoons of mixture onto the sheets and flatten slightly with the back of a wet spoon.
5. Bake in the oven for 10 minutes. These cookies won't turn out exactly like regular cookies because of the different ingredients, but they will be just as delicious - if not more!
6. Allow to cool before eating and/or storing in an airtight container.
