Mugalai Vegetable Pulav Recipe
Vegetable Mugjlai briyani recipe takes a bit of time. It will be well worth the end-result- a briyani that is fragnant,flavorful, and filling.Steaming hot briyanis straight from the handi(a cooking vessel), scented with cinnamon, saffron and nuts and served with a cool minty raita.


Ingredients:

Rice:
Basmati Rice – 1 cup
Vegetables:
Carrot – 1 cup (length pieces)
Beans – ¼ cup
peas-1/4 cup
Baby corn – 6
Cauliflower -15 florets
Potato-2
Onion – 2 finely chopped
Tomato – 1 finely chopped
Spices:
Cinnamon (Lavangam) – 2
Cardamom (Ealakkai) – 2
Clove (Pattai) – 1 piece
Salt – for taste
Red Chilli Powder -1 tea spoon

Leaves:

     1.    Mint – 2 table spoon
     2.  Bay Leaf – 1
     3.   Corainder leaves – 2 table spoon

To grind:

Grated coconut – 1 tea spoon
Cashew nuts – 1 table spoon
Poppy seeds (Kasakasa) – ½ tea spoon
Garlic – 4 pieces
Green chili – 6 pieces
Ginger – ½ inch piece
Indian parsley (Thaniya) – 1½ tea spoon
other ingredients:
Cashew nuts – 2 table spoon
Fruits – ½ cup (Pineapple, Mango, Apple)
Dry grapes – 2 table spoon
Butter – 1 table spoon
Ghee or oil –for boil
curd – 1/2 cup.

 Method:

Boil the rice and then place it over a plate to reduce the heat.
After the heat is reduced, make sure that the rice should not stick with each other.

Vegetable Masala preparation:

Heat oil in the pressure cooker, and then add cinnamon,cloves,cardamom,onion, grinded items and saut until light brown in color items
Then add the red chilli powder,corainder leaves,mint leaves,bay leaves,tomatoes,boiled vegetables, shredded vegetables,salt,beaten curd and mix well.
Add half cup water and cook for 2 whistles.

Briyani preparation:

Melt half cup ghee in a Handi or any thick bottomed vessel.

Add the rice and cooked vegetable masala in layers. The top and bottom layers should be cover with lid and bake in a oven for 10 minutes.

After it is well boiled, the mixed fruits, Cashew nut (boiled with ghee), Dry grapes are added.
Small amount of butter is added and serve with hot & beauty.
